vangi bath recipe | brinjal rice recipe | how to make vaangi bath powder with step by step photo and video recipe. south indian cuisine is full of flavoured rice recipes which can be used for all 3 courses. moreover it can also be used for different types of occasions and celebration feast meal. one such multipurpose rice and eggplant based meal recipe is vangi bath recipe or also known as brinjal rice recipe.
flavoured or spiced vegetable-based rice recipes are very common across south india. it is typically made for morning breakfast, but can be easily extended to other meals. the interesting part of these rice recipes are the spice mix used in each recipe. they are non-identical and it is different set and blend of spices. similarly, for brinjal rice recipe, there is a unique spice mix which helps to enhance the eggplant flavour. moreover the spice mix can also be used as curry powder and can be used for almost all dry curries or sabji. i personally make this in bulk and use it in my dry potatoes, gobi or even mix veg fry.
furthermore, before wrapping up the recipe, some more tips, suggestions and variations to vaangi bath recipe. firstly, you can use any types of eggplant of this recipe, but ensure it is not fully ripe and has to be stiff and tender. i personally like the purple one and hence i have used in this recipe. secondly, the spice mix can be strong with its spice heat for some of them. the quantity i added would lead to medium spiced baath. however if you wish to reduce you can be reducing the spice mix quantity. lastly, the rice has to be a combination of spice, sweet (jaggery) and sour (tamarind) in taste. do not compromise on the quantity and quality of these ingredients.

Ingredients
for vangi bath masala powder:
- 5 inch cinnamon
- 1 tsp clove
- 5 pods cardamom
- 1 mace / javitri
- 2 tsp poppy seeds / khuskhus
- 2 tsp oil
- ¼ cup coriander seeds
- ¼ cup urad dal
- ¼ cup chana dal
- 1 tbsp cumin / jeera
- 1 tsp methi / fenugreek
- ½ cup dry coconut, sliced
- 20 dried red chilli
for rice:
- 2 tbsp oil
- 1 tsp mustard
- 1 tsp cumin / jeera
- 1 tsp urad dal
- 1 tsp chana dal
- 2 tbsp peanut
- few curry leaves
- 1 dried red chilli
- 2 brinjal / baingan, cubed
- ¼ tsp turmeric
- ½ cup tamarind extract
- 1 tsp salt
- ½ tsp jaggery
- 3 cup cooked rice
- 2 tbsp coriander, finely chopped
Instructions
vangi bath masala powder:
firstly, in a heavy-bottomed pan, dry roast 5 inch cinnamon, 1 tsp clove, 5 pods cardamom and 1 mace.
roast until the spices turn aromatic. keep aside.
in the same pan dry roast2 tsp poppy seeds until it starts to pop up. keep aside.
in the pan heat1 tsp oil, add ¼ cup coriander seeds, ¼ cup urad dal, ¼ cup chana dal, 1 tbsp cumin and 1 tsp methi.
roast until the lentils turn golden brown.
now add½ cup dry coconut and roast slightly.
cool completely, making sure all the spices are not burnt.
now heat1 tsp oil and roast 20 dried red chilli until it puffs up.
cool completely and transfer the roasted spices to the blender.
blend to coarse powder without adding any water. vangi bath masala is ready.
vangi bath rice preparation:
firstly, in a large kadai heat2 tbsp oil, add 1 tsp mustard, 1 tsp cumin, 1 tsp urad dal, 1 tsp chana dal, 2 tbsp peanut.
saute and splutter on medium flame.
now addfew curry leaves and 1 dried red chilli. saute well.
further add2 brinjal and saute for 2 minutes.
also add¼ tsp turmeric, ½ cup tamarind extract and ½ tsp salt.
mix well, cover and boil for 5 minutes.
now add 2 tbsp of prepared vangi bath masala powder,½ tsp jaggery and mix well.
add3 cup cooked rice and ½ tsp salt.
mix well making sure the masala is well combined with rice.
cover and simmer for 5 minutes or until the flavours are absorbed well.
finally, add 2 tbsp coriander and enjoy vangi bath with raita.

- mix well, cover and boil for 5 minutes.
- now add 2 tbsp of prepared vangi bath masala powder,½ tsp jaggery and mix well.
- add3 cup cooked rice and ½ tsp salt.
- mix well making sure the masala is well combined with rice.
- cover and simmer for 5 minutes or until the flavours are absorbed well.
- finally, add 2 tbsp coriander and enjoy vangi bath with raita.
notes:
- firstly, make sure to adjust the amount of vangi bath masala powder tot the spice level.
- also, make sure to cook brinjal in tamarind extract to balance the flavour.
- additionally, roast the spices on low flame to prevent from burning.
- finally, vangi bath recipe tastes good when served after 1 hour.
